Peanut Butter & Maple Oatmeal Bars

Ingredients:

  • 2 cups rolled oats
  • 1/2 cup peanut butter (smooth or crunchy)
  • 1/4 cup Jakeman's maple syrup (plus extra for drizzling)
  • 1/4 cup butter or coconut oil
  • 1/4 cup milk (dairy or plant-based)
  • 1/2 tsp vanilla extract (optional)
  • A pinch of salt
  • 1/2 tsp cinnamon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a saucepan, melt the butter (or coconut oil) over low heat. Once melted, stir in the peanut butter, maple syrup, milk, vanilla extract (if using), salt, and cinnamon. Mix until smooth and combined.
  3. Remove from heat and add the rolled oats, stirring until the oats are evenly coated in the mixture.
  4. Pour the oat mixture into the prepared baking dish and spread it out evenly.
  5. Bake in the oven for about 15-20 minutes, or until the bars are golden brown and firm to the touch.
  6. Once done, allow them to cool before cutting into squares or bars.
  7. Drizzle with extra maple syrup before serving for an added touch of sweetness.
