Mapple Peach Popsicles

Ingredients:
- 2 ripe peaches (peeled and sliced)
- 1 cup Greek yogurt
- 1/4 cup maple syrup
- 1 cup almond milk
- Fresh mint (optional, for garnish)
Instructions:
Prepare the Peaches:
- Peel and slice the ripe peaches. If desired, you can also roughly chop them to make blending easier.
Blend the Ingredients:
- In a blender, combine the peach slices, Greek yogurt, maple syrup, and almond milk.
- Blend until the mixture is smooth and creamy.
Fill the Popsicle Molds:
- Pour the peach mixture into popsicle molds, filling each mold almost to the top. Leave a little space at the top for expansion when the mixture freezes.
Insert Sticks:
- Place the popsicle sticks into the molds. If the sticks don’t stand up straight, you can cover the molds with aluminum foil and poke the sticks through the foil to hold them in place.
Freeze:
- Transfer the molds to the freezer and freeze for at least 4 hours, or until completely solid.
Unmold and Serve:
- To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds to loosen them.
- If desired, garnish with fresh mint before serving for an extra touch of flavor and color.
Tips:
- You can experiment with adding other fruits like strawberries or mangoes to the mixture for a different flavor profile.
- For a more textured popsicle, you can add small chunks of peach or other fruits into the molds before pouring in the blended mixture.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
